Caldwell Community College and Technical Institute’s Watauga Campus will be offering Culinary Arts Summer Camps for adults this summer.

The weeklong courses will cover the basics of several different types of cooking and cooking techniques and will be held in CCC&TI’s state-of-the-art culinary kitchen on the Watauga Campus in Boone.

Camps will be held from 9 a.m. to 12 p.m. Monday through Friday. Cost is $175 each and space is limited.

Following is the schedule of available courses and topics to be covered:

May 28-31

Skills I – The Basic Art of Cooking for Adults

This course will teach the basics of cooking including proper knife skills, basic sauces and thickening techniques, stocks, broths, soups and other basic cooking techniques.

June 3-7

Nutrition for Food Service – The Art of Cooking Nutritionally

This course will cover how to prepare meals that are nutritionally sound and teach preparation techniques that maintain foods natural nutrients. Some basic knife skills and other cooking basics will also be covered.

June 10-14

Baking I – The Basic Art of Baking

This course will cover the science behind baking including how to prepare yeast products, quick breads and cookies. Students will also learn more about laminated dough, a culinary preparation consisting of many thin layers of dough separated by butter, produced by repeated folding and rolling. Examples of laminated dough include puff pastry, filo dough and croissants.
