 HUDSON, N.C. – Caldwell Community College and Technical Institute’s Culinary Arts program has announced the dates and menus for its fall semester installment of Caldwell Cuisine. Each of the six meals will be served at 6 p.m. at the J.E. Broyhill Civic Center in Lenoir
and are priced at approximately $20 per person. The events are open to the public, but diners are required to make a reservation due to limited space.
The first meal of the season, “Grant Buffet,” is scheduled for Sept. 8. The menu will include: mixed greens salad with assorted composed salads; carved roast beef au jus; mojito marinated chicken breast with tropical fruit salsa; sautéed red snapper with three color peppers and Spanish olives; gratin potatoes with rosemary and goat cheese; grilled zucchini, red peppers and artichokes; and dessert.
In addition to providing an opportunity for the community to enjoy the eclectic gourmet Caldwell Cuisine menus at a reasonable price, the events also provide CCC&TI’s Culinary Arts students a chance to apply their classroom knowledge. The fall schedule for Caldwell Cuisine includes: · Thursday, Sept. 8 - Grand Buffet · Thursday, Sept. 22 – Fromage de Cuisine · Thursday, Oct. 6 – Fish and Fowl · Thursday, Oct. 13 – Fried Green Tomatoes · Thursday, Nov. 3 – Surf-N-Turf · Thursday, Nov. 17 – Prime Rib Dinner
To make reservations, visit www.cccti.edu/cuisine. Tickets for the first meal, on Sept. 8, will be available at the door, however, subsequent Caldwell Cuisine events will require the purchase of tickets at the Civic Center Box Office or through the Caldwell Cuisine Web site.
